Today, Ionian Gold produces cold-pressed, high-polyphenol extra virgin olive oil from hand-picked olives grown on the family estate. The olives are pressed within hours of harvesting and the oil is bottled on site in Kefalonia. The estate is managed using low-intervention, biodynamic principles, with a focus on soil health, natural compost, pollinators and working with the seasons.
